When making dietary changes it is important to remember to be:
Food sensitivities are different than allergic responses in our body. They are low-grade inflammation and immune responses. Therefore, sometimes they come on hours after eating the food. If the food that you are reacting to is consistently in your diet then it also can be a consistent inflammation process.
True allergic responses are caused by IgE responses. Food sensitivities are driven more by IgG immune responses.
When looking at changing your diet, remember that small steps forward can make a big difference.
Food dairies and food journals can really help to track both concerns with diets but also progress.
